heirloom tomato salad with goat cheese and thyme
Heirloom Tomato Salad with Goat Cheese and Thyme
Serves 4
Ingredients
- 4 medium sized heirloom tomatoes (preferably a mix of colors)
- 1 small log of goat cheese
- olive oil
- lemon juice
- sea salt and fresh ground pepper to taste
- fresh thyme, flowers only (stems removed) - or in this case, I used Chives
- Wash tomatoes and pat dry. Cut into 1" pieces
- Place tomatoes on individual plates
- Drizzle with Olive Oil followed by squeezed lemon juice
- Portion goat cheese on each plate, arranging over the tomatoes
- Sprinkle with fresh flowers of Thyme
- Salt and pepper to taste



I love the sound of this with fresh thyme. Always looking for more ideas with heirloom tomatoes.
Hi Kalyn--what an honor to hear from you! While the salad was delicious with the chives, I really did prefer the fresh thyme as was suggested by my friend. Either way, if you have seasonal, ripe heirloom tomatoes you can't go wrong with your herb of choice, as the tomatoes are the stars in this simple recipe.
