"Cooking something special can be as seductive as eating it. Of course, cooking while entertaining takes a degree of confidence that, in itself, can impress as much as fancy ingredients. To my mind, seduction meals involve conversation, gazing, tasting, touch, and movement. Cooking and serving a meal allows ample time for all five. The only seduction meal that will ever matter to me was making homemade thin crust pizza on an outdoor grill at sunset on the deck of my country house. I made two with separate toppings; mozzarella with olives and fresh basil and a white pizza with chopped clams and garlic. A crisp Italian white wine got the conversation flowing and helped pull everything together. Mission accomplished!"
1 ball of pizza dough
1 medium size can of crushed tomatoes (San Marzano preferred),
1 ball of super fresh mozzarella cheese, slice ¼ inch thick
1/2 bunch of fresh basil leaves, chop into large coarse pieces
¼ cup of black oil cured olives, pull flesh off of pits
small can (6.5 oz.) of chopped clams, drain liquid
3 cloves of fresh garlic, slice super thin like they do in the movies
¼ cup of extra virgin olive oil
grated Pecorino Romano cheese
flour to dust work table for rolling out dough
crushed dried hot pepper flakes
salt and pepper
Buy a ball of pizza dough from your favorite pizza parlor or restaurant.
The dough can be stored in the refrigerator for a few days in a damp
towel and closed plastic container. It will rise and increase in size so
you are forewarned.
Fire up the grill to high heat and clean and oil the grates.
Drain tomatoes and place in saucepan over medium heat. Add a few
tablespoons of olive oil, a few slices of garlic, a few pieces of basil
and salt and pepper flakes. The sauce should chucky and a bit spicy.
Turn heat to simmer after sauce just starts to bubble.
Cut pizza dough in half and roll out to ¼ - ½ inch thickness using flour
to prevent sticking. The shape of your pie is less important that the
thickness. A wooden roller is helpful here but don't be shy about using
your hands to pull out the dough because it is very elastic at first.
Assemble your ingredients near the grill. This will allow the seducer to
impress the soon-to-be seduced with their skills rather than walking
through a screen door as I did. Place dough on grill and allow a few
minutes to toast. Flip pizza over with metal tongs. It should be toasted
across the whole surface with distinct grill marks.
For the mozzarella and olive pizza, first spread out a few tablespoons
of tomato sauce. Then lay down mozzarella slices, olive pieces and basil
leaves. Finish by drizzling olive oil and sprinkling Pecorino Romano
over the pie. Cover grill for about 2 minutes or until topping is
melting and bottom surface of pizza is crisp.
For the white clam pizza, spread drained clams over toasted dough and
then a few garlic slices to your liking. Finish by drizzling olive oil,
sprinkling Pecorino Romano and then a few basil leaves over the pie.

Cut pies into small slice and serve with a chilled wine. Enjoy!
